These Cadbury Mini Egg Brownies are the most delicious brownies ever. These ultra-fudgy homemade brownies are packed with melted chocolate and chocolate chips, slathered in a decadent dark chocolate ganache, and sprinkled with colorful crushed Mini Eggs.
They’re deep, dark, and rich and everything a chocolate lover dreams of. And the best part? They couldn’t be easier to make.
I used dark chocolate chips and dark chocolate Cadbury Mini Eggs for the deepest, darkest, richest flavor, but you can use milk chocolate mini eggs and semi-sweet chocolate chips if you prefer.

- Dark chocolate chips. You're going to need A LOT of chocolate chips for this recipe- 2 ¾ cups in all. You can also use chopped chocolate bars.
- Unsalted butter. Cube the butter for faster melting.
- Brown sugar. All brown sugar makes these brownies soft, moist, and chewy. I use dark brown sugar for the richest flavor, but light brown sugar also works.
- Eggs. Use room temperature eggs so they blend well into the batter.
- Vanilla extract. The deep chocolate flavors can handle a full tablespoon of vanilla extract.
- Cadbury Mini Eggs. I used dark chocolate mini eggs, but you can use milk chocolate or another brand of mini chocolate Easter eggs with crispy sugar shells.

- Chocolate chips. Instead of stirring dark chocolate chips into the batter, try white chocolate chips, semi-sweet chocolate chips, or even peanut butter chips!
- Frosting. Instead of chocolate ganache, frost the brownies with this delicious not-too-sweet Cream Cheese Frosting for Brownies or chocolate frosting for brownies.
- Espresso powder. Add ½ to 1 teaspoon of instant espresso powder with the dry ingredients to intensify the chocolate flavor even more.
🥣How to Make Cadbury Mini Egg Brownies

Step 1: Melt 1 ¼ cups chocolate chips, butter, and cream in the microwave until smooth. Pour into a large mixing bowl. Add the brown sugar and stir until well combined. Stir in the eggs, one at a time, then the vanilla.

Step 2: Add the flour and salt. Stir until just combined. Stir in ½ of the crushed mini eggs and ½ cup chocolate chips.

Step 3: Pour batter into an 8x8 baking pan lined with parchment paper and smooth out the top. Bake in preheated oven at 325 for 30 minutes. Cool brownies completely in the pan on a wire rack.

Step 4: Warm the heavy whipping cream and butter in the microwave. Add the chocolate chips and let stand for 3 minutes. Stir until smooth. Pour the ganache on top of the brownies.

Step 5: Sprinkle the rest of the mini eggs on top of the chocolate ganache. Chill in the refrigerator for at least 30 minutes.

Step 6: Cut into squares, serve, and enjoy with a big glass of milk.
👉Top Tip: Bake just until set: For moist, fudgy chocolate brownies, remove them from the oven when a toothpick inserted 2 inches from the edge comes out with a few moist crumbs. Internal temperature should read 180–190°F.

Ingredients
Cadbury Egg Brownies
- 1 ¾ cups dark chocolate chips, divided
- ⅓ cup butter, cubed
- 2 tablespoons heavy cream
- 1 cup dark brown sugar
- 2 eggs, room temperature
- 1 tablespoon vanilla extract
- ¾ cup all-purpose flour
- ¼ teaspoon salt
- 1 cup Cadbury Mini Eggs, crushed, divided dark or milk chocolate
Chocolate Ganache
- 1 cup dark chocolate chips
- 1 tablespoon butter, cubed
- ⅓ cup heavy cream
Instructions
- Preheat the oven to 325. Line an 8x8-inch metal pan with parchment paper.
- Melt 1 ¼ cups chocolate chips, ⅓ cup butter, and 2 tablespoons heavy cream in a microwave-safe bowl for 30 seconds. Stir. Heat in 1-2 15-second intervals until melted and smooth.
- Pour the chocolate mixture into a large mixing bowl. Add the brown sugar and stir well with a sturdy wooden spoon until smooth, 30-60 seconds. Stir in the eggs, one at a time, then the vanilla. Stir well. Add the flour and salt and stir until just combined. Stir in ½ cup chocolate chips and ½ of the Cadbury Mini Eggs.
- Pour the brownie batter into the prepared pan and smooth out the top. Bake for 30 minutes or until the edges look set and the center looks underdone. Internal temperature for gooey brownies should be 180-190. Cool in the pan.
Chocolate Ganache
- In a microwave-safe bowl, warm ⅓ cup cream and 1 tablespoon butter for 30 seconds, then 1-2 15-second increments. Do not boil. Add the chocolate chips, ensuring they are completely submerged in the warm cream. Let sit for 3 minutes. Stir until smooth. Warm for a few seconds in the microwave if the chips aren't all melted.
- Pour the ganache over the cooled brownies and smooth out the top. Sprinkle the remaining Cadbury Mini Eggs on top of the ganache. Chill for at least 30 minutes in the refrigerator. Cut into pieces and enjoy.
- Store brownies frosted with ganache covered in the refrigerator.
