Easy 3 Ingredient Chocolate Mousse (without eggs) is fluffy, creamy, and decadent with rich chocolate flavor -- and takes just a few minutes to make. It's the perfect last-minute dessert or sweet treat to cure your chocolate cravings.
Warm ¼ cup heavy cream and the chocolate in the microwave for 30 seconds, then 10-second intervals, until warm. Stir until smooth. Set aside to cool to room temperature.
In a large bowl, whip the remaining ¾ cup heavy cream and vanilla extract to medium peaks (peaks hold their shape, but the tips curl down). Add the chocolate mixture and whip to stiff peaks (peaks hold their shape and do not curl). Do not overmix or the mousse will become grainy and crumbly when cold.
Spoon or pipe the mousse into individual ramekins or small bowls, or transfer to a large serving bowl. Chill 1-4 hours before serving. Top with fresh whipped cream, fresh berries, crushed cookies, chocolate chips, and chocolate shavings.

When whipping heavy cream, start on a lower speed and gradually work up to medium-high speed to keep it from splattering all over the kitchen.
Keep a close eye on the whipped cream, it can go from stiff peaks to overwhipped in a split second.
