Instructions
In a large bowl, crumble pound cake until there are no large pieces. Mix the jimmies and frosting in with your hands or a mixer at medium speed until combined into a soft dough.
Roll one tablespoon portions into balls and place them on a wax paper or parchment-lined baking sheet. Chill for at least one hour in the refrigerator. Re-roll the balls to smooth out any flat spots.
In a deep bowl or glass measuring cup, melt white candy melts in the microwave according to the package directions. Add a little oil if needed to thin it out, starting with 1 tsp.
Work with a few cake balls at a time, leaving the rest in the refrigerator. Dip about ½" of a cake pop stick into the melted chocolate, then insert it about halfway into a cake ball. Dunk the cake ball into the candy coating until it is completely covered. Gently tap the stick on the side of the bowl to remove any excess melted chocolate.
Immediately add sprinkles while the coating is still wet and place the cake pop upright to dry into a box with holes or weighted-down glasses (see notes). The candy coating will be set in about an hour.
Notes
To hold the cake pops upright while they dry, poke small holes into a box or styrofoam block or weigh down short mason jars or glasses with something like sugar, rice, or beans.
Too much frosting can make cake pops soft. Start with a little and add until the mixture forms a soft dough.
If you use a box cake mix or homemade cake or frosting, you may need a different amount of frosting.
Let the melted candy cool for a minute or two after heating. Dipping very cold cake balls into very hot melted chocolate can cause the chocolate coating to crack.
