- Fresh strawberries. When picking out strawberries at the store or farmers market, look for firm, plump, shiny, fresh berries that are red all the way to the top -- even under the green stems.
- Granulated sugar AND powdered sugar. Granulated sugar is best for macerating fruit -- powdered sugar can make the juices cloudy. Powdered sugar is best for whipped cream without any granules of sugar -- and the little bit of cornstarch helps stabilize it.
- Flavor extracts. In addition to vanilla extract, which is so lovely with the juicy berries, I add a teeny, tiny bit of almond extract for subtle what's-that? flavor. Too much can easily overpower, so start small and add as needed.
- Cold heavy cream. Look for heavy whipping cream or heavy cream -- they're the same thing. Regular whipping cream has a lower milk fat and won't whip up as sturdily as heavy cream with a higher fat content.
🥣How to Make Strawberries and Cream

Step 1: Place the sliced strawberries in a large mixing bowl. Add the granulated sugar and extracts. Gently toss to combine. Set aside for 30 minutes up to a couple of hours.

Step 2: With an electric mixer -- beaters or whisk attachment -- whip the heavy cream, powdered sugar, and vanilla extract until medium peaks form -- the peaks are soft and hold their shape with a droopy tip.

Step 3: To serve, spoon whipped cream into a small serving dish. Top with macerated strawberry slices and more whipped cream. If desired, sprinkle with fresh lemon zest.

- Store leftover whipped cream in an airtight container in the refrigerator for a day or two. If it becomes runny, gently whip it until it is fluffy and creamy again. Be careful not to overwhip.
- Use leftover strawberries and cream on pancakes, waffles, pound cake, or strawberry shortcake.
