Here in Minnesota, summers are for finding any reason to get together. And these white chocolate cheesecake stuffed strawberries are the perfect dessert for entertaining. The flavor combination of juicy strawberries and cheesecake is always a winner, and the blueberry swirl makes them extra pretty and flavorful.
Plus, this easy strawberry cheesecake bites recipe comes together with simple ingredients, makes it look like I fussed more than I did, and is easy to make ahead of time.

- Large fresh strawberries. You'll need good-sized strawberries so you can stuff them with plenty of the cheesecake filling.
- Room temperature cream cheese. Let the cream cheese sit at room temperature for about 30 minutes so it mixes smoothly without lumps.
- Almond extract. A little goes a long way, so easy does it. I don't use vanilla extract because I didn't want to alter the color of the cheesecake filling and the white chocolate chips have vanilla flavor. But if you have clear vanilla extract, add about ½ teaspoon.
- Blueberry jam. The swirl of blueberry jam just might be my favorite part. You can use any flavor of jam you like.

Chocolate Dipped Cheesecake Stuffed Strawberries
After filling the strawberries, dip the bottoms in melted white chocolate, let the excess chocolate drip off, and place on a plate or baking sheet lined with parchment paper. Refrigerate until firm.
How to Fill Strawberries Without a Piping Bag
If you prefer to spoon the filling into these delicious strawberry cheesecake bites, I recommend cutting the strawberries in a different way.
- Cut off the tops of the strawberries and use a sharp paring knife, small spoon, or melon baller to hollow out the berries. Use a spoon to fill the centers of the berries with cheesecake filling. Serve them on their sides.
- Cut the strawberries in half lengthwise and cut a small sliver off the rounded side so it will sit flat. Spoon cream cheese mixture on top of each of the strawberry halves, like a deviled egg.
🥣How to Make Strawberry Cheesecake Bites
Step 1: In a small bowl, melt white chocolate chips in the microwave. Set aside to cool. Whip cream cheese with a hand mixer until creamy. Mix in powdered sugar and almond extract. Add melted white chocolate and mix until creamy.
Step 2: Add the blueberry jam and gently swirl. Chill the filling for one hour or until firm enough to hold its shape when piped.
Step 3: Cut the tops off of the strawberries. Place them flat on a cutting board and cut an X ¾ of the way down the strawberry.
Step 4: Place cheesecake mixture into a pastry bag or ziptop plastic bag fitted with a piping tip. Pipe cream cheese mixture into the center of each strawberry.
Step 5: Top each strawberry cheesecake bite with a blueberry.
Serve or refrigerate until ready to serve. Enjoy the same day.
👉Top Tip: Once strawberries are cut, they will eventually release liquid. If not serving immediately, I recommend storing them in a container lined with a paper towel to absorb any moisture.

Strawberry cheesecake bites can be stored in the refrigerator in an airtight container lined with paper towels for up to 3 days.

Prepare the blueberry cheesecake filling a day ahead of time and store in the refrigerator. The next day, wash, cut, and fill the strawberries.

Strawberry Cheesecake Bites
Ingredients
- ¾ cup white chocolate chips
- 8 ounces softened cream cheese
- ½ cup powdered sugar
- ¼ teaspoon almond extract
- 3 tablespoons blueberry jam
- 30 large strawberries
- 30 blueberries
Instructions
- Melt white chocolate chips in 30-second intervals, stirring in between. Set aside to cool.
- In a large bowl, whip cream cheese until fluffy. Mix in powdered sugar and almond extract. Beat in melted white chocolate until smooth and creamy. Swirl in the blueberry jam. Cover the bowl in plastic wrap and chill for one hour or until firm enough to pipe.
- Wash strawberries and pat dry with paper towels. Cut the tops off the strawberries and place them flat side down on a plate. Cut an X ¾ of the way down the strawberry.
- Place cheesecake filling in a piping bag or ziploc bag with the corner snipped off, fitted with a star tip. Pipe the filling into the center of each strawberry.
- Top each stuffed strawberry with a blueberry. Cover, refrigerate, and serve the same day.
Notes
- If not serving within an hour or so of making them, place strawberries on paper towels to absorb any moisture released from the strawberries.
