If you love a good toast recipe, you'll be all over this Blueberry Toast, too. It's really fast and easy to make with just a few wholesome ingredients and a couple minutes of prep time.
🫐Ingredients
See recipe card at the bottom of the post for the full list of ingredients and exact amounts.
- Blueberries. Fresh blueberries are preferred, but frozen blueberries will also work -- the topping will just be a little looser.
- Honey. You can also use maple syrup to sweeten the ricotta.
- Cinnamon. Cinnamon adds flavor to the ricotta and seasons the blueberry jam. Use more or less to taste.
- Black pepper. I add a few twists of freshly cracked black pepper to the ricotta and blueberries, but this is optional.
- Almonds. Use any kind of nuts -- walnuts would be great! Or leave them out.
- Bread. Sourdough, French bread, whole grain bread, white bread -- use whatever kind of bread you have and love.
🥜Variations
- Add a little lemon juice and a sprinkle of lemon zest to the ricotta.
- Thick Greek yogurt is a great alternative to ricotta.
- For a PB&J vibe, mix a little peanut butter with the ricotta.
- Use any flavor of jam or homemade blueberry compote.
🥣How to Make Blueberry Toast
Step 1: Stir blueberries, jam, and a pinch of cinnamon and black pepper in a small microwave-safe bowl. Warm for 30-45 seconds. Stir and mash some of the blueberries. Set aside to cool.
Step 2: In a small bowl, stir the ricotta, honey, cinnamon, and black pepper.
Step 3: Toast bread slices in the toaster, air fryer, or toaster oven. Spread each one with a generous layer of ricotta. Spoon on the blueberries.
Step 4: Top with sliced almonds, a drizzle of honey, and a sprinkle of sea salt.
✅Tips
- Let the blueberry jam mixture cool to thicken up a bit before spooning it onto the toast.
- Optional step, whip the ricotta with a hand mixer until it's smooth and creamy.
- Try toasting bread on the stovetop! Heat butter or olive oil in a pan over medium heat, add your favorite bread, and heat and flip until both sides are golden brown.
📅Make Ahead
Make the ricotta spread and blueberry jam a day ahead of time and store in separate containers in the refrigerator. Warm up the blueberries before serving.
